Swaybars are widely touted as having "no negative effects" on handling or ride compliance, but the fact is they do indeed. It's just that the increased cornering feeling is so good, it's easy to overlook the changes. Also, keep in mind, you changed out upper strut bearings, struts, and swaybars with bushings all at the same time. Every one of those changes makes the car stiffer. Softer dampers aren't the solution; they won't control the car as well.
I'm a huge fan of the Bilsteins. Kind of shocked that yours are so harsh. Of course, I drive briskly in most driving conditions so I appreciate a performance shock perform well under all conditions; and the Bilsteins do just that. My perception is that if you are driving like a commuter at sub-40MPH speeds on city streets with lots of imperfections, you will most likely not appreciate the ride quality they give at higher speeds. Conversely if you envision your self never wanting to slow down for upcoming railroad tracks and you want a damper that can handle the jarring while allowing the vehicle to remain under control, I'd keep the Bilsteins.
