The insufficient coolant temperature code is bogus; the ECU is supposed to leave "coldstart state" at approximately 160 to 165 deg F ( 71 to 74 deg C).
Both of your thermostats are fine. I believe the issue is 02 monitor loop software related; the ECU ignores the 02 sensor until it leaves coldstart, at which point the pulse width supplied to the injectors is modified dynamically. In coldstart state the pulse width to the injectors is fixed, the mixture is slightly rich. The ECU is reading bad data from the 02 sensor; some obd2 scanners allow you to test the O2 sensors, others just report whether the monitor loops (O2, catalyst, Evap) have completed. The P0135 code is real, now to understand why.
I avoid 'universal' O2 sensors for the upstream (before cat) location. They typically do not have enough granularity of signal to satisfy the small fuel trim changes that the ECU makes. Last time I looked, the correct sensor was a Bosch 13662, which used to be $125 and now is avail for as little as $75.
