When that hose nipple fell off the intake on my car, I recall that it idled fine; the ECU gets feedback from the O2 sensor and enriches the mixture to compensate, but it was a slug while accelerating.
Regarding the cat, not sure what you will be able to see by looking through a used cat with a LOT of miles on it. The only car on which I have ever had to replace a cat was my C900, and this was done under the EPA mandated 100,000 mile warranty. Note that it is illegal for auto recyclers to sell you a used cat, and the platinum/paladium inside is worth $$$, but some may look the other way when you buy a used "exhaust part" - or maybe you could buy one from someone in the classifieds or on Craigslist (guy in Woodstock parts out SAABs). I will not say what I think of inserting a straight pipe into a car that could be classified as inherently "low emissions", the result of you not replacing it with a newly produced replacement vehicle. In any case, look at the hose nipple before you start on this.
