It's actually not a motor mount - it's a torque rod that keeps the engine from thrashing about too much under load. So just like aero Guy says, you can take it out with no problem. Same with putting it back in.
You should replace the bushings if they are cracked and split. It does usually happen around the same time for both, but if one were looking fine, I'd leave it be.
As to 'better', it depends on your definition. The stock mounts are pretty soft, so there is some engine movement under hard acceleration. In a non-turbo, that's not a lot. Some folks prefer more rigid mounts - less engine motion under hard acceleration, which translates into better shifts when you're pressing the engine hard. The drawback of the stiffer mounts is more vibration at idle.
I replaced the mounts on my 9000's with some aftermarket ones from Sobstory. They seem a little stiffer than stock. On one car, there was no increase in vibration. In the other car, the steering wheel shook like a paint mixer. I swapped out one of the new mounts with a still decent-looking one that I'd removed, and the car idled smooth. So it depends on the car. But unless you've got a lot of extra horsepower, or are looking for real snappy shifts under load, I'd stick with the stock bushings.
