It shows your thermostat is working.
When the engine is cold, the thermostat is closed, and the coolant circulates in the engine. Eventually the coolant in the engine warms up enough to open the thermostat. When it opens, a surge of COLD coolant from the radiator comes in - this quickly drops the temp of the coolant in the engine - the needle on the gauge drops, and the thermostat closes. Remember, that coolant in the radiator hasn't seen the engine yet, and it's been cold soaking all night. The coolant in the engine heats up again, thermostat opens, more cold coolant comes in, and the needle drops.
Eventually the radiator warms up, and the coolant throughout the system is pretty much all the same temperature. The needle doesn't swing as much.
So what you're seeing is that your $$ for a new thermostat was good - it's working!
