Remove the sending unit and screw in a pressure gauge to see what the pressure is.
Some numbers:
oil pump pressure reducing valve opens at 57-71 psi
oil pressure warning light comes on at 4.2-7.1 psi
oil pressure at 2000 rev/min @ 176 deg F is 43 psi
Don't rule out the possibility that the sending unit is bad, making the light come on.
