Steve,
I'm not an expert in this area, but I can tell you a couple of things. The 2 stroke era had the Gran Turismo model which had the higher HP GT engine. Later the Monte Carlo certainly had upgrades with respect to seats, trim, wheels, brakes, even a Halda Speed Pilot, and I think a higher HP 2 stroke engine. When the 4-stroke came along, you could get a Monte Carlo V-4 for the first year or so- it had trim upgrades, but I don't think it had any more HP. After that, the special model was the Deluxe, which only had a better trim package.
Since Saab was so into the rally scene, they published the Sport and Rally catalog which had performance parts for sale and a performance mods described. This catalog is on the internet in a couple of locations- do a search and it should turn up easily. Seems like I recall that these S and R parts were available to buy and not installed by the dealer.
People occasionally mention "works" cars. These were the factory rally cars and occasionally ended up in private hands.
Performance parts are out there, many in Sweden and Finland. Jack Lawrence at Motor Sport Service has a nice catalog of performance parts for the V-4 motor. Close ratio gearsets are rare and expensive, as are limited slip differentials.
I think that's the gist of it. Other VSaab experts can add more, or correct me.
