Blip Throttle vs. Double Clutch

What's the real difference? At the Viggen Flight Acad. they teach you to 1) clutch in (disengaged), 2) blip throttle, then 2) downshift 3)clutch out. Now in a double clutching exercise, you 1) clutch in, 2) move shifter to neutral, 3) engage clutch (out), then blip throttle, 4), clutch in, 5)downshift 6) clutch out. I understand that with double clutching you are enabling the driveshaft to match revs versus just the engine revs.
But is that really necessary?
