We have a '99 S <wife> and a '01 SE <mine>.
Both cars are nice and very fun to drive. The biggest difference in the two cars are handling and amenities. My car is a little quicker but not so much that you feel your getting ripped off driving the S. BUT, if you really want to enjoy the power and Really get into driving the car, the SE susspension and tires are a VERY big difference. The S tires are so lame I can't wait to change then. Not nearly enough tire for the pop of the engine. The S suspension is ok, softer than the SE and would probably be better with better tires.
The SE suspension while tighter and firmer, is not harsh in my opinion. Those seeking a softer ride, might indeed prefer the S, but for how the car looks and the sweet power, the SE suspension if perfect in my opinion.
As for the rest, the body cladding on the SE is very very sweet looking. The wheels are larger and more sporty. The stereo on the SE is also much significantly better than the S, which I find barley adequete (ok it's lame). The wood dash, i could take or leave but it doesnt bother me. Actually after getting back into my wife's car, I kinda like the wood to break up the plastic.
Both are a fun to drive but the SE is certainly more sporty from a traction and handling perspective. You also get free maintenance for three years and one year of free OnStar service with the SE.
