Your steps a pretty much it. It the process basically as follows?

1. Jack up car and put it on stands
2. Remove wheels
3. Loosen screw(s) that hold caliper in place

ON THE FRONT BRAKES, THE CALIPER PINS ARE HIDDEN BY A DUST PLUG. JUST PULL OFF THE DUST PLUG TO ACCESS THE CALIPER PINS. ON THE REAR BRAKES, YOU WILL NEED TO USE A PUNCH OR DRIFT TO PUSH OUT THE PINS AND THEN JUST LIGHTLY HAMMER THEM BACK IN TO PLACE WHEN YOU ARE DONE. THEY ARE JUST HELD IN PLACE BY THE SPRING AROUND THE PIN HEAD.

4. Do not allow caliper to drop or put unecessary force on brake lines

PLACING THE CALIPER ON A BOX THE RIGHT HEIGHT WILL FREE BOTH HANDS FOR WORKING.

5. Remove old pads
6. Grease/goop/blue goo the back of new pads and install

BE SURE TO GREASE THE CALIPER PINS AND ALL THE SLIDING POINTS. THE SLIDING POINTS WILL BE OBVIOUS AS THEY ARE SHINEY AND BURNISHED FROM MOVING.

7. Use caliper spreader to slowly open up pads, to avoid bubbles in lines, etc.

A PAIR OF CHANNEL LOCKS WILL WORK ALSO.

8. Replace caliper in reverse order of removal
9. Adjust??? I don't know what to do here...

NO ADJUSTMENT NECESSARY.

10. Replace wheels
11. Lower Car
12. Pump brake pedal, then test drive.

Am I forgetting anything? Any tips? Any special tools required?
Any potential snags?

SOUNDS LIKE YOU HAVE IT PRETTY WELL COVERED.

Does the hand brake on the 9-3 work on the fronts or backs? If fronts,
is there anything I need to know to keep it working properly?

THE PARKING BRAKE WORKS ON A SET OF BRAKE SHOES INSIDE DRUMS FORMED BY THE INSIDE OF THE REAR ROTORS. YOU WILL NOT CHANGE THE PARKING BRAKE SETTING AT ALL, SO IF IT WORKS NOW... NO PROBLEM.
