Brakes are a great place to start learning. You don't need a bunch of expensive tools and is fairly simple. It is an important system, so do take your time, buy a manual, etc. Pointer: Do one side at a time. If you forget how to put it back together, look at the other side. (This is minimally helpful with disc brakes because of the simple design, but was really helpful with old drum brakes if you forgot how to put all the springs on...)

The pistons have to be pushed into the calipers so the new pads will fit. This can be done in a variety of ways, just be certain you push it in EVENLY, not one side and then the other.

Changing pads is a good time to bleed/flush the brake fluid (maintainance item). The only difficult thing is to be sure there is no air in the system. This requires a) an assistant to slowly press the brake while you bleed the fluid, closing the fitting before your assistant gets the pedal to the floor. Repeat until old fluid is replaced and no air; b) use a vacuum device such as a MityVac to pull the fluid out; OR c) use a pressure device, such as a cooling system pressure tester with an adapter, to push the fluid through.
