I think you are right about the pull/wander. Generally wider = more wander. Stock offset is what, 49mm ? I think going from 6.5 to 7.5" rims usually reduces that to 35mm which places another 14mm outboard and 12 mm inboard. If you go to 8", you'll need to put the other 13mm on the outboard side since there's not a lot of room on the inboard side. That means you are now at 22mm offset vs 49mm stock. Your track is now two inches wider overall compared to stock. That's a lot of track change.
