I guess it's a little bit late for making this remark now, but:
The timing belt and Idler pulleys should ABSOLUTELY be replaced as stated in the SAAB service bulletins... the V6 is VERY sensitive about this.
Sorry to hear about your engine. And, sorry to hear that you actually brought it up to 3k rpms even with all that loud knocking!!! If you didn't totally ruin your piston tops when it first stalled (you likely didn't) you most certainly will have now.
