For a couple reasons:
1. Today's dashboard plastics really do not need protectant. 20-30 years ago plastics technology wasn't advanced enough to prevent drying and fading but that's no longer the case. The composition of the dashboard material is very different from the rest of the interior, eventhough they look the same. Automakers have developed plastics for the dashboard that will withstand decades of exposure without cracking or fading. This information comes to me directly from a car care products mfr who deals directly with the automakers, all of whom have told them their dash plastics are designed to be more durable than the rest of the plastic parts in the interior.
2. Armor All used to be silicone oil-based but no longer. The "Original Shine" version is now water based and is plenty safe for dashboards, rubber, plastic, etc. There are still plenty of oil based dressings, though, so use a product you know is safe and you'll be fine.
3. Some protectants include a UV sunscreen (Zaino, 303 Aerospace, Vinylex, etc) so if that's important, use one of those. I don't know what's in skin care products but the ingredients probably are not designed to dress and protect plastic and rubber.
