Our Saab indy is pretty good about this: though they have a sign on the door indicating peons are not allowed in, they do let customers come in and take a look, or watch quick stuff. It helps if you are knowledgeable, interested, don't get in the way, and don't talk too much. But it's one of those things in a litigious society that no shop owner wants a customer to get hurt and be on the hook for medical costs or higher insurance payments... let's face it, there are hazards in a shop and not all customers are very aware/competent. Also many customers have zero interest in how it gets fixed, only does it work, did it get done on time, and what's it cost? And if you're paying a tech to do something major (eg a new tranny or whatnot), while some of it might be interesting to watch, that's a lot of hours not to be doing something else... or doing the swap yourself?
