I haven't been behind the wheel of enough of the other euro brands, but if I needed to buy a car, once the supply of used Saabs dries up, that's where I would look. Volvo and Audi would top the list. Some have defected to Hyundai/Kia, but there is still too much "veneer" there for me.
I have driven a bunch of Subarus (on extended trips, ie 3000+ miles), but not an Impreza with a turbo (ie WRX or STI). It is possible that those are better, but the Subies I have driven are not at all like SAABs... I really wanted to like them, but the driving experience was really sub-par... Interiors feel like Toyota to me and handling of the larger models is lousy compared to a Saab (especially that new Forester, it's awful). The automatics are geared for off the line, so without a turbo, those cars are terrible for passing on the highway (need a stick, but the gearing for sticks on those is similar).
We own a newer 9-5 Arc (and 2 c900's). It is in a totally different league (than the Subarus). It does not feel as sporty as a c900, but it is faster, and it does actually handle better also - it just doesn't feel as raw and fun. It's a heavier car and very safe. If you want more sporty, look for a 9-5 Aero or 9-3. OG 9-3 is fast, not as good handling as the c900 or 9-5, but fast and fun. 9-3ss 2.0L is tighter and fun. Basically, you are not going to get the same experience as the 9000 out of a newer SAAB (or as good build quality by feel, or that cavernous hatch), but the newer "GM" ones are the closest thing out there that I've driven... I plan to drive the ones we have until something really different comes along... that could be a long time!
Hey, if you have the cash, test drive a Panamera - it has a hatch!
