I've never run into an occasion in my Viggen where double-clutching was necessary. Neither on the street, autocrossing, nor on the track. Follow the link below for an outstanding explanation about why double-clutching is not necessary.
I also just tried the quick blip of the throttle to the floor in my Viggen and the revs went to about 2,200rpm. Remember that Trionic is an adaptive engine management system and it may have adapted to your less-spirited driving style. My mechanic's recommendation is to "drive the car like you stole it" and the T7 will give you all the performance you need.
