Congrats on fixing your problem, Didn't you have to reverse the travel when you put on 2bbl carb? Move vertical link to other side to change direction of link to carb? Its been 35+ years since I've done this and Can't quite picture it now <g>.
If so you get a double slap to forehead <G> for not checking it then, if not excuse me for thinking you may have been as dumb as me<G>
These cars are known to need a twist of the linkage arm (long one with plate on each end for carb and link down to pedal arm) a pair of pliers on each end twist to increase or reduce angles. The pedal arm itself can be bent to allow full travel or to adjust pedal height. We always used a quick throttle travel with a stop bolt under gas pedal on our race cars to prevent drivers from breaking something <g> or bending linkage. This was on our check list.
