So I emailed the gurus: Mark Ashcraft in Oregon and Club Sonett Sweden.
Mark advises using Permatex Number 2 on both sides, and has a spectacularly detailed procedure for intake manifold install.
Club Sonett Sweden advises using sealant on one side just to hold the intake manifold gasket in place for assembly.
So apparently the gasket is designed to go on dry, but over the years the pros have added sealant for different reasons; Mark says it helps fight intake leaks, CSS says it's just easier to assemble.
As to the odd coolant restrictions designed into the gasket, CSS confirms that it is intentional and will hold up just fine (indeed the old gasket was on for 20 years or more and still in one piece).
