and at engine operating temperatures any oil, even 0W, will be at its rated (30/40/50 weight). Winter weight oils (thats what the 'W' stands for) have the vicosity measured at 0F (-18C), while the other number (30/40/50 weight)is measured at 212F (100C). Turns out that at 0F (-18C) both 0W and 5W oils have the same vicosity range. The 0W is a creative notation of a lower pour point than 5W oils.
By the way, if you check the Mobil 1 product data sheet -

you will find that the Mobil 1 0W-30 is actual a tiny bit thicker than the 5W-30 when measured at 40C and 100C.
