you don't have to resurface the flywheel if you don't want to, but it will give smoother shifts. though, if it has the symptoms described in your instructions, then you probably do want to have it done.
you don't have to replace the rear main seal behind it, either, but you may as well if you're going to be tearing out the clutch. it's a preventative thing. (for a homemade seal driver, search "plywood", then look for my post.)
townsend's approach to repair work, as i interpret it, is that a job should be done efficiently and completely. there is efficiency in replacing the seal, because it prevents a customer from coming back some time down the road complaining of an oil leak that will require that the clutch/flywheel be removed to repair. that they recommend a resurface reflects that a thorough, complete clutch job should have it done.
my local saab shop (scanwest) agrees that a resurfaced flywheel is an important part of a clutch job: they take the customer's out, throw in a resurfaced flywheel with the new clutch, and send the old one to be resurfaced and used on the next customer's car.
