I tackled an exhaust manifold gasket r&r this summer; broke a stud & spent hours trying to get the thing out. It was nerve-wracking trying to drill a hole for an easy-out -- one slip & the bit goes into the head.
Extensive searches here yielded the consensus that it is foolhardy to re-use the old studs (one post retells of snugging down the very last bolt just a tiny bit more and...snap!) Also, use new copper nuts. Torque the studs in the head with two old bolts before threading/tightening the new ones.
