Rear brakes locked after new pads & rotor

Just replaced the rear pads and rotors on our '93. Now they are locked solid. Caliper & pads didn't want to go easily over rotor so I tapped them (gently) into place with leather hammer. This i have found in the past is pretty common, and usually loosens up as soon as one operates the brake pedal a few times or drives a few feet.
Now I am wondering. I used Auto Zone pads (not the best but lifetime warranty, used several sets in past no problems) and VIP rotors. I've used several sets of VIP rotors over years in Saabs, no problem but this set I notice was from China.
Measured them and they are .510 thick while Bentley says they should be .500 new. Would this be enough to cause problems? Anyone else have problems with AZ pads or VIP rotors? I'm trying to decide whether to fiddle anymore or just call eEuroparts and buy good stuff.
Oh, I backed off the little adjuster far as it would go, and double checked twice.
