Doing 5-speed conversion soon (1st time)

Mine is an 1987 Turbo (175k miles) with auto tranny on the way out. I found an engine and 5-spd trans from a wrecked 87 with 75k miles. The engine and trans were pulled about 3 years ago and have been sitting in the sellers garage. Current owner says both were in great condition before the wreck. I was just going to just use the 5 speed and do the conversion, but I am thinking of just dropping in the whole engine / trans unit as a whole. I'm thinking this is a no brainer because of the obviously lower miles on both the engine and trans. My question is, can I trust an engine that has been sitting idle for that long? I can't really check it out until its installed my car. I don't want to do the swap twice if the engine has a problem from sitting too long. What should I look for here? Seems like kind of a big gamble especially for my 1st time engine pull and conversion.
