I suggest, fill it with oil, start it up and, if the pressure light stays off, let it idle and look for leaks. I wouldn't suggest driving it right away because there's probably oil running out somewhere and if it's sitting in one place you won't be able to miss the leak (you should put some cardboard or something under it to minimize the mess too). If the pressure light comes on at idle and won't go off then the first step is to see if that is resulting from a stuck oil pressure relief valve. If there is some noise at first don't panic, probably lifters. Use a stethescope (or long screwdriver) to isolate the source. If it is a bottom end noise running it a little more won't change the big picture (you'll be replacing it not rebuilding it, right?). If it's all good at idle then rev it up (while parked) and look for the leak. It may take the higher oil pressure that you developed on the highway to exhibit the leak. I think it's possible that using the wrong filter would cause an oil pressure problem too so check that. Cheers.
