The only way is to do as you intend with dye & pressure test as the head is alloy. With that method you leave nothing to chance. Before you go to that expense you may want to determine how much was shaved off the deck. That can be determined by measuring & comparing the deck height of a std head or by determining the volume amt in a chamber. Hope the shop went out of business.
