Hi Jon-
I have the same car. You probably know most of this, but here is my take:
The owner's manual states that the system will reach the requested temperature as soon as possible and to not "play" with the controls. In the summer when the requested temperature is below the outside temperature it blows so hard your nostrils bulge. In the winter it does this slowly as to not blow cold air in your face. Except I have noticed if you get out of your car and return quickly. In this case the system realizes that the coolant temperature is high and blowing hard is advantageous to quick heating.
I also do not think that the temperature stated on the display is actually the temperature in the cabin. It seems to be a guide and while not perfect, it beats fussing with manual controls on a normal car. Your requested temperature of 80 or 82 is near the upper end of the range and the system may think that you have achieved it and is blending in cool air to maintain it. This seems normal to me. Has the car always been like this or is this a recent change? My wife likes a cool car and we keep it at 62 and use the bun warmers. I think in reality that it is not always 62 in the car especially on sunny days.
