I'll also assume that if your belt is in one piece, it's the thermostat. Water pumps usually don't fail by not pumping - they fail by leaking at the seal, and it's a gradual failure.
Most likely the T-stat has failed shut. Please don't take this wrong, but the thermostat is a wear item, and regular replacement is part of normal upkeep and maintenance. I recommend replacing the thermostat every 2-3 years, when the coolant is flushed.
I am a great believer in the Saab OEM thermostat. Most of the reputable places will sell you a perfectly fine thermostat that will work just great. However, I have had bad luck with some aftermarket thermostats. Given the price difference is about $5, but the replacement task is not much fun, I don't take the chance. Make sure you install the new one with the little weep hole facing UP, so that the system will bleed air properly.
