You didn't say what kind of driving you were doing. If it happened when you were moving at a good pace, I would think it is the t-stat.
If not, definitely check the fan. It should come on when the gauge is around 1/2, and if it gets a little higher, it should kick into high speed. A fan that is not turning on or is turning on too late will allow your car to get quite hot if you are not moving.
Oh, and as for changing the thermostat. it's all a matter of how much stuff you can work around.
I remove the big rubber elbow from the throttle body, the hose coming off of the thermostat and one of the coolant hoses that goes into the throttle body. You may find your own way of doing it.
