I believe 89 was always stock. Townsend recommends 82 and I agree. Just gives you an extra margin of error as it ages. Actually, i think the best thing is to get one of the fan controllers BobS makes. I have one and it's great. You can set the temp at which the fans activate, and it will maintain that temp very well. Mine now goes to just a hair below halfway and never moves. Given the theory that head gasket failures are caused by unequal expansion and contraction between iron block and aluminum head as the temperature swings up and down, this sort of temperature stability seems like a great thing to me.
Even if you don't buy that theory, it's nice that it never lets the temp get too high, at which point the cooling system has to "catch up" and bring it back down.
