I too have a higher mileage car that I'm very attached too. I never plan on selling my car, because, in addition to my attachment, it's esentially worthless. I doubt anyone will pay much more than the insurance company's offer for a car with that many miles. Their job is to compensate you for the value of the car, not the value of its utility to you, which is obviously higher. I would try to get more money from them, sure, but I don't think they have any obligation to pay more to fix a car than it is worth.
Why not settle (for as much as reasonably possible) then get the car fixed on your own? Considering the car has very limited value at this point, and I suspect you have no intention of selling it any time soon, a salvage title doesn't really matter. You may be out of pocket a few hundred dollars, but such is the price you have to pay for your attachment to the car, or for the value of its utility to you over its market value, neither of which the insurance company can be held responsible for.
Now, I hate insurance companies, but I see their point on this one and while I say go for what you want, at a point you will obviously have to compramise.
