Why three jack stands?

Why three? Two for the sides and the hydraulic floor jack is in front center. Where does the third stand go?
Are not jack stands trustworthy? Have there been cases of jack stands collapsing? If you do not trust jack stands, I would have thought you would double up on each side, for a total of four stands.
