The lack of sufficient roll stiffness on the 9K with stock bars is evident at moderate speed (30-40) driving straight down the road. Just steer the car quickly right-left-right a couple times while staying in your lane. You can feel the car want to lean. And when your rear shocks are worn the weight transfer to the outside rear wheel in a fast curve becomes very noticeable.
So yeah, firm up the shocks & struts first. There has been a lot of debate here about Bilstein HD vs. Touring. Some like the harder ride of the HD, others prefer the firm but not so hard ride of the Touring. I'd do the Touring myself. And don't worry about the car sitting high. Aero springs only drop it 10MM which is pretty much not noticeable unless you park next to a 9K with standard springs. Even then 10mm ain't much.
I don't think the bars add unsprung weight. They are bolted to the unibody and count as the weight of the car supported by the springs. While they are part of the suspension and do provide resistance to the springs, I don't think they count as unsprung weight, especially in a way that matters on a 3250 pound sedan. Hey, they only weigh about 40 pounds or so for the pair. It just doesn't matter.
I haven't found any disadvantages to the bigger bars yet, and I've had them on some very twisty uneven roads. The car is still composed and easy to drive. Your comment about "less articulated" doesn't makes sense to me, as the bars make the whole suspension work together to spread cornering loads better. They *can* be harsher on one-wheel bumps but I don't find it an issue in terms of control or stability.
