If it turns out the sender is falsely reporting low oil pressure then I think that will be a first.
Thinner oil results in more flow and less pressure. I'm not recommending you try a thicker viscosity, just saying a thinner oil would more likely make the oil can light stay on longer, not shorter. Whether it makes a difference does not change the fact that you don't know why the light is staying on. So why experiment with oil viscosity?
You'll learn more by testing the sender, replacing the sender or installing a gauge. The sooner the better.
