All the dealer needs to accomplish the divorce is for the Saab head unit to be plugged into the connector in the dash. Can't you just pull your new head unit, and temporarily plug in the Saab head unit and let the dealer divorce it? They shouldn't charge too much for the few minutes it takes to do that.
And you can't really blame Saab or the dealer's service if you were the one that removed the original head unit during the installation of your new system. I'm not blaming you. You just didn't have all the information you needed. While I agree it is a hassle, life is too short to let this raise your blood pressure. See if they won't meet you half way on this.
