Poor running and starting can be caused by a split or cracked VAC line. The VAC line to the MAP sensor is critical. The line from the throttle body to the evaporative control system purge valve on the RH fendor has been an issue too.
You low mpg's sounds like what I got when I had a limp home mode.
Before you replace the sensor, with a cold engine, check resistance from the base of the senor to ground. The sensor gets its ground through the down pipe, turbo, bolts, gaskets etc. Not a great design. Often the problem is at the sensor base to downpipe connection. If you find resistance to ground, back out the sensor(s) a bit and brighen up the contact faces with some fine sandpaper used for metal work or body finishing, then reseat the sensor. If you have a 96+, then you have two sensors and that can be twice as expensive.
At 120000 miles the sensor might be dead. These can be very expensive from the dealer. So one does not want to replace these just to see what happens.
I replaced mine at 108000 miles, by splicing in a generic unit. This is quite inexpensive and I did this strictly as preventative maintenance. So I was able to do it at a time of my choosing at little cost. I did this to avoid a problem where things were not running right where I would be at the dealers and having to pay the dealer price plus labor to install and diagnostics.
As for the idea that your ECU might be running default rich mixtures, that would be consistance with your other problems. The deposits on the plugs should confirm this.
