Well, the basic idea is, if you turn the car off right away oil and coolant stop flowing and the temperatures spike real quick in the turbo and cause "coking", which overtime will eventually hurt the oil flow and eventually suffocate and kill the turbo from lack of oil over time. The idea with cooling the turbo is to let the car idle for about 30 seconds so it can cool down so you won't get this.
There are things called "turbo timers", I have one in my mr2 and it keeps the car running for a specified period of time and then turns it off for you afterwards, unfortunetly its not a viable option on saabs unless you have an automatic since the car needs to be in reverse to remove the key.
On a final note, Im not sure how true "coking" is today with the improvements of oil and the use of synthetic oils, I've seen debates about this on the mr2 board, and it still seems that cooling the car for 30 seconds after a hard run, or an extended drive before turning it off is still a good idea, but might not be as necessary as it once was.
