we redid our kitchen 3 years ago with dakota mahogony granite....it was not cheap, but we are in the process of selling the house now, and the work we did in the kitchen will more than pay for itself on resale. the granite does not need to be sealed, but can be....and repeated sealings are also not needed....we also created a bathroom, and used a verde marble, this could use a sealing, as it can stain.
our next house, an 1812's dutch colonial farmhouse, we will likely use soapstone in the kitchen, also a material that can be sealed, by applying mineral oil , but typically, after a handful of applications, you really don't need to do it anymore, or at least you don't do it as often.
I'm sure you remember soapstone from your chemistry lab in high school, as time goes by it gets darker and darker grey, it has a lot of talc in it, so it feels "soft"....it can be scratched, but it can't be burnt, it is very hard overall, but over time, it will pick up scratches....granite on the other hand typically will dull even your best knives.
it's all up to you, what do you like the look of, and what can you spend?
