Um, I don't know if this will be at all helpful but after much pained deliberation we went with porcelain tile on the wet side and maple butcher-block on the dry. The tile, which is tough as nails, has the color all the way though, meaning it doesn't show wear. We had it set with super-tight grout joints which makes for a very clean looking installation and doesn't seem to accumulate debris. The poor tile guy was cutting and hand-beveling little radius corner pieces for days.
The butcher block gives a nice warm look against the stainless appliances and fixtures. There's a tile backsplash to tie it in with the rest of the kitchen. An annual light sanding with fine steel wool and reapplication of tung oil keeps it looking brand new, despite over four years' use.
I don't/didn't like Corian in the least, but do admire certain granites. The nicest stone counters I've seen are of soapstone, which can be repolished in situ as needed to repair any surface damage (unlike granite). It's not easy to find, however.
