I do it too. Mostly because I'm a gearhead too and apreciate smooth shifting.
I did it first for smooth shifts in my E-type which has a very crude first generation of syncro gearbox. Double clutching is smooth in my Viggen, my 88 900T, and my wife's 9-5 too. My first vehicle was a mazda truck with a five speed manual and no tach. I would often change gears without using the clutch just by listening to the engine speed change. I don't do that in nice vehicles though.
