It sounds like you understand correctly the difference between real double-clutching vs. the throttle=blip in neutral that you used to do. Unless you're downshifting at really high rpms, double clutching isn't necessary. (It's fun, tho...)
Matching revs as you engage the clutch in the new gear is always good. That prevents shock to the driveline which seems to be more important.
