Well, "cross bike" can mean either a cyclocross type bike (drop handlebars and medium width knobby tires) or a hybrid type bike (usually more upright, flat bars, for more casual riding). From the brands mentioned, I suspect these are cyclocross type bikes, which would be my choice if you want to do some fairly spirited riding on dirt roads and light trails, as well as roads.
A cross bike is a good choice unless you want to do the large majority of riding on pavement, in which case I'd get a road bike. You can certainly use a cross bike on pavement, and can put road tires on it if you choose, but IMHO for mostly road riding a road bike will ride a bit better.
Components now are generally good and you probably can't go wrong with any bike by any of those manufacturers. They are all good companies and I suspect a shop steering you to them is a good shop.
The main task is finding a bike that suits the riding you want to do, and getting a good fit. For someone without alot of knowledge, the best place to start is to go to a good shop and work with them. As I said, it sounds as if you may have a good shop.
If you can find an acceptable new bike at an acceptable price, I wouldn't screw with a used one. You might find a great one, but likely there will be compromises in fit and function which you may not be able to evaluate well.
