Find a great local bike shop + support them. You'll figure out what suits you best based on their advice + test rides. They should be able to fit a bike to you properly as well.
In terms of road vs cross bikes, it's up to you and what style you get into, but sounds like you might have fun on something like a cyclocross. I have friends doing long rides + races on dirt roads riding Cervelo bikes with wider road/cross tires... but if that was all (or mostly) what they did, they'd get a cross bike: they mainly use the Cervelos for road. There are some really nice bikes out there of all types, and the most interesting bikes seem to come from smaller manufacturers (ie other than Specialized + Trek).
In terms of mountain bikes (I am a mountain biker, not a roadie), there are lots of great options out there, and some fantastic all round bikes. Most of the nicest ones aren't cheap. Some of the nicest ones also aren't that complicated (eg I have friends riding 29" single speed fully rigid Ti mtbs on highly technical terrain + even in enduro races: sub 20lbs, nothing to break, + the big wheels roll over everything). But you are right, if you are mainly going to do road/dirt road rides, even with skinny tires on a mtb, you will have trouble keeping up with your buddies on road bikes unless they are real slow!
