Weight reduction, always a nice topic! I weighed my car last summer, tank full of gas and my fat ass in it, about 3100lbs. Not bad, I thought! I've ditched the AC, spare's not in the car, neither is the jack (I put them back in for roadtrips), running Super Aeros with 205/50/16s.
I recently had my whole interior apart, so I also removed the sound deadening material. This stuff is quite heavy, rubbery stuff with a foam backing. You can take that out. I must have ditched at least 15 lbs. You could also get rid of your rear seat. The trunk/hatch floor is plywood, ditch that too. Don't forget, also, the parcel shelf. I have in mind to make my own out of fibreglass. Two reasons: a) want to learn how to handle fibreglass someday so I can build rally car hood and trunk lid and b) my current piece has holes for the two 6x9s, which I plan to move to the inside rear panels - thus I'll need a new parcel shelf anyway. Seats wise, I think you won't save much weight if you get afermarket reclining seats. I've got a pair of Sparco Torinos in the car, and from memory, they weigh about the same as the stock stuff. That said though, my old Sparco Spring racing bucket weighed 16 lbs, probably about half of what the factory leathers weigh.
Rack - do you really want a manual rack? With wide tires, it's a bastard to move around, slow speed wise. It would be quite difficult, I think, to adapt a rack from another car. Definitely do-able, but a lot of fabrication required. That said, I believe the E30 M3 rack is 3.25 lock to lock...
