The Check engine light comes on because the computer senses that there is a leak in the fuel vapor system. This leak could be any number of things, but the most common is the gas cap seal. It takes a while for the computer to get rid of the light because it is checking to make sure that there is no longer a leak under any conditions.
FYI the size of a leak that must be detected is quite small and the next set of legislature is reducing the diameter of the hole by a factor of two.
