difference in performance between H,V,Z rated tires

I know the difference in overall speed in the ratings, Z being overkill as we could never make 168mph, but what about cornering abilities of the 3 different ratings? I believe the sidewalls get stiffer with the higher speed rating so supposedely the cornering ability goes up too right?So how much better at cornering is a Z-rated tire versus a H-rated tire.I'm looking at Michelin Pilot XGT H4 tires, supposedely higher performance like the other Pilot series tires, but more reasonably priced since they're only H-speed rated.They are $77 at Costco.The other tire I was looking at was the Dunlop Sport 5000 which is z-rated all-season for about $95 or so. Opinions?
