It's pretty straight-forward. It sounds like you have a good idea what to do.
The shifter boot is tightly stretched over a metal frame. Just pull at the edges and work it out. Do the reverse when putting back together.
Those two screws under the bellows need to be removed to detach the center and floor consoles.
Your Torx bit set will come in handy.
