Working the clutch is the hard part. A good way to learn it is to take it to an empty parking lot. Practise letting the clutch out (in first) without giving it any gas to get a feel for it. Once you get the hang of that it'll be really simple to feed the gas in as the clutch engages which is how it's normally done. Trying to do the clutch and gas at the same time is what throws people--learning them one at a time is easier. The other problem people have is forgetting what gear they're in and knowing what gear they should shift to next. So forget 1st and fifth. Ist is just to get you rolling from a start and fifth is for the highway. In residential areas (25 mph) think 2nd and 3rd. 3rd is for most driving, drop into 2nd for corners or if you slow down. On faster urban roads (35/45 mph)think 3rd & 4th--same deal. A good habit is to shift through the gears sequentially and not skip gears--that's how you get balled up and in the wrong gear. Example: As you're coming to a stop shift down through all the gears (this does require thinking ahead) and let the clutch out briefly in each one. This will give you a sense of what each gear does--if you downshift too quickly the car will lurch and the engine rev. The other benefit is that if the light should change before you stop you'll be in a gear that will work instead of floundering around for one. As long as the car is rolling second works fine to take off. In theory you should always be in a usable gear. Also, it's best to wait until you stop to shift to 1st--less wear on the trans.
