Consumer Reports tests a small number of tires each year in different categories; for their tests, they measure rolling resistance using a dynamometer (which would only simulate real-world resistance) along with a number of other categories. If you're a CR member, you can access their reports at their web page; if not, try your local library.

Now I realize that CR testing isn't definitive, but it does at least give you something to go by. According to their tests, you CAN have excellent rolling resistance and excellent handling characteristics in the same tire.

In H rated "performance all season" tires, the Michelen Primacy MXV4 is top rated for rolling resistance AND for all categories of handling/braking. In V rated "performance all season," no tire had good rolling resistance ratings. For "ultra high performance all season," the Cooper Zeon RS3-A and the Yokohama Avid ENVigor were highly rated in all categories, including rolling resistance. In "ultra high performance summer" tires, the Michelin Pilot Super Sport and Pilot Sport PS2 were highly rated in all categories, including rolling resistance, as was the Goodyear Eagle F1 Asymmetric.
