Speaking as a guy who grills yearound,(before I take care of the driveway, I shovel the snow off the deck., I have a tip for you: Don'get fillets, get the steaks! They're generally thicker so they cook up better, there's no skin to stick to the grill and they won't fall apart like the fillets tend to do.
Put them right on the grill--don't use foil. Cook to taste but generally I turn them once after I get that nice searing on one side.
And you don't have to put oil on them becuase salmon is such an oily fish to begin with (good omega 3 oil).
If I'm cooking swordfish,however, I will coat it with olive oil. Personally, I would never put anything on foil--you might as well cook it in your oven!
